By using a smoky, spiced shio-koji marinade to break down the proteins and lock in moisture, the finished dish comes out remarkably juicy and succulent. For that summer holiday mood, we top it with a zesty tomato dressing which complements the spice perfectly. It’s a vibrant, healthy dish that delivers maximum flavor with minimal effort.

A Note on the Presentation (Lessons from the Kitchen)
While Naoko is a master of flavour, we’re still refining our plating. In this version, we got a bit overzealous and let that lovely tomato dressing take over. The flavour was 100% there—the zesty tomatoes paired with that smoky spice is a phenomenal combination—but the juices ended up softening the crust.

Our Recommendation
Try nestling the chicken on the dressing or only topping the bottom edge of the slices. This ensures the smoky, crisp texture of the shio-koji marinade stays front and centre, with the dressing acting as a bright, supporting contrast rather than hiding the main event.

Ingredients
  

  • 300 g chicken breast
  • 1 tbsp olive oil (extra virgin)

The Marinade

  • 30 g shio-koji (10% of the weight of the chicken)
  • 2 crushed garlic cloves
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • ½ to 1 tsp chilli powder (adjust to your preferred heat level)
  • black pepper (2-3 generous twists)

Fresh Tomato Dressing

  • 1 large tomato, diced
  • 1 tbsp olive oil (extra virgin)
  • 1 tbsp shio-koji
  • 1 tbsp lemon juice
  • Italian parsley (to suit your taste)

Instructions
 

  • Prep and Pierce: Trim any excess skin, sinew, or fat from the chicken breast. Prick the meat thoroughly on both sides with a fork to allow the marinade to penetrate deep into the fibres.
  • Marinate: Place the chicken and the marinade ingredients into a sealable food bag (or a bowl covered with cling film). Massage well to ensure even coverage and refrigerate overnight.
  • Temper: Remove the chicken from the fridge and allow it to come to room temperature. Add the olive oil and massage well into the meat.
  • Initial Roast: Preheat your air fryer to 180°C. Lower the heat to 160°C, add the chicken, and roast for 12–15 minutes, turning the meat halfway through.
  • Prep the Dressing: While the chicken is cooking, combine all the tomato dressing ingredients in a small bowl.
  • The Finish: Increase the air fryer temperature to 200°C for a final 3 minutes to achieve a beautiful, golden-brown sear.
  • Rest and Serve: Allow the chicken to rest until the initial heat has dissipated before slicing. Arrange the slices on a plate and finish with a generous spoonful of the fresh tomato dressing.

Pro-Tips:
  • Make the dressing in advance to let the flavours meld.
  • While returning the chicken to room temperature awakens the active enzymes in the koji for maximum tenderness and umami, limit this counter time to ensure proper food hygiene before cooking.
